Nope, Satti! That’s certainly not the case in my family at all. What you have in mind is French cuisine as executed by top chefs rather than family cooking, or indeed regional cooking. Portion size is entirely dependent on the level of mastery required — if you’re having a multi-course fine dining meal, your portions will be small but flavor-packed, and there’ll be a great succession of many dishes…

With high level French cuisine, the focus is always on quality rather than quantity. I have one such classically-trained chef in the family, I’ll ask them to explain this in more detail when I see them as they’re passionate and eloquent about their art. I’ll try and write about it afterwards.
